This coffee was picked at the peak of ripeness and then honey processed on raised beds. The honey process removes the cherry’s skin while keeping the fruit (mucilage) intact. The fruit is allowed to dry on the parchment over the next 10 days. This process uses no water and brings a unique flavor of cherry, blackberry, fig, plum, brown sugar, and honey to your cup.
